昂旺衮嘎罗卓教言集NKL64 民众厨房工作规范 民众厨房工作规范 民众厨房工作规范。民众厨房务必知晓:如 胜者(藏文:རྒྱལ་བའི་,含义:胜利者,指佛陀)之教言所说:‘一切生活所需皆包含于食物之中。’ 因此,以我为首,直至最底层的仆人,都要确保食物供应充足,并由三个厨房部门分别管理,按照工作清单执行。同样,对于所有需要提供茶、粥等食物的人员,应按以下顺序安排:画师、木匠、泥瓦匠、石匠、颜料工匠、羊毛主管、女主管、所有羊毛房人员、大型佛像建造等情况发生时;铜匠、磨光匠、乞丐等;以及献茶者等;特殊情况下,包括阿杂惹(梵文:Acarya,教师)等都需要从主厨房领取食物,若主厨房不足,则由副厨房负责。所有仆人及以下人员,每人每天供应四勺食物,以上人员则供应两斗食物。晚餐时需要提供粥,对象包括寝宫主管、房屋主管、马匹主管、药材主管、四位官员、泥瓦匠、木匠、画师、印刷主管、九庄商人们,每人一勺。但若前往北方森格门(藏文:སེང་གེ་སྒོ་,含义:狮子门)以南,或南方嘉门(藏文:རྒྱལ་སྒོ་,含义:王门)以北,则不予供应。 日常饮食中的茶、肉类等,以及小型聚会等需要肉类的情况,应照常供应米饭和水果。酥油灯等物品较多时,由主副厨房共同负责;较少时,由副厨房负责。在进行普巴金刚(藏文:ཕུར་སྒྲུབ་,含义:橛修)法会等大型活动时,若楞康(藏文:རུང་ཁང་,含义:自由房)未能提供足够的粥,则从剩余的食物中,每人供应一勺。总之,所有食物的供应都应根据实际情况进行,确保所有物品都得到充分利用,避免浪费。若出现私藏或分配不均等情况,应立即纠正。同样,水、火、木材等物资的供应也应如现在一样,确保供应充足,避免出现任何差错。上述所有茶、酥油、糌粑等物品,首先要制定明确的规章制度,确保物资的供应量适当,避免出现短缺或过剩的情况。

It is essential for the public kitchens to understand: As stated in the teachings of the Victorious One (Tibetan: རྒྱལ་བའི་, meaning: Victorious, referring to the Buddha): 'All necessities for life are contained within food.' Similarly, for all those who need to be provided with tea, porridge, etc., the arrangements should be made in the following order: painters, carpenters, masons, stone carvers, pigment artisans, wool supervisors, female supervisors, all wool house personnel, and when major statue constructions occur; coppersmiths, polishers, beggars, etc.; and those who offer tea, etc.; in special cases, including Acaryas (Sanskrit: Acarya, teacher), food must be obtained from the main kitchen, and if the main kitchen is insufficient, the secondary kitchen is responsible. All servants and below receive four scoops of food per person per day, while those above receive two dou of food. Porridge should be provided for dinner, including the chamber supervisor, house supervisor, horse supervisor, medicine supervisor, four officials, masons, carpenters, painters, printing supervisor, and the nine estate merchants, one scoop each. However, if traveling north to Senge Gate (Tibetan: སེང་གེ་སྒོ་, meaning: Lion Gate) to the south, or south to Gya Gate (Tibetan: རྒྱལ་སྒོ་, meaning: King Gate) to the north, no food will be provided. Tea, meat, etc. for daily meals, and meat when needed for small gatherings, etc., should be provided as usual with rice and fruit. When there are many butter lamps, etc., both the main and secondary kitchens are responsible; when there are few, the secondary kitchen is responsible. During major events such as the Phurba (Tibetan: ཕུར་སྒྲུབ་, meaning: Vajrakilaya practice) ceremonies, if the Rungkhang (Tibetan: རུང་ཁང་, meaning: Free House) does not provide enough porridge, one scoop should be provided from the remaining food for each person. In short, all food supplies should be managed according to the actual situation, ensuring that all items are fully utilized and avoiding waste. If there are cases of hoarding or uneven distribution, they should be corrected immediately. Similarly, the supply of water, fire, and wood should be as it is now, ensuring sufficient supply and avoiding any errors.
